Hello!  I haven't been nearly organized enough this past week to photograph all my meals from a single day.  I blame the evening shifts at work, and the resulting fact that most dinners lately have either been eaten at 4pm or 9pm... not my favorite dinner times, but I'd rather eat super early or super late than not at all.  Anyway, the point of my rambling is that I'm just going to show a bunch of pictures of recent eats.  Get ready.  There are a TON of pictures coming your way.  Happy WIAW. ;)

Panera's whole grain bagel smeared with cream cheese (ended up adding a bit more!). My first bagel with cream cheese, I think. I used to not like cream cheese and bagels, but thankfully, I've grown up a bit. ;)

"Traditional" Greek salad: cucumber, tomatoes, bell pepper, kalamata olives, onion, plenty of feta (but still not nearly as much as they give you in Greece!), olive oil, lots of Greek herbs.

Greek yogurt waffles (the ones from Fit For Motherhood that I've blogged about before) drizzled with Walden Farms blueberry syrup. I've always wanted to try that syrup and finally found some at Sprouts. I did realize it was sweetened with Sucralose but oh well... everything in moderation. ;)
Leftover salad from work with Bolthouse farms ranch and fresh fruit to accompany pizza polenta bites inspired by this post of Hannah's.  Oh my goodness, soooo good!  I kept mine simple with pizza sauce and mozzarella on basil garlic polenta, and I can't WAIT to have these again!

Steel cut oats with butterscotch extract topped with Kind blueberry clusters granola, Fage 2% Greek yogurt, Naturally More flax peanut butter, and walden farms chocolate sauce. Most decadent breakfast ever!

Breakfast burrito for lunch (because I just have to have sweet for breakfast). La torialla factory multi-grain tortilla filled with Amy's refried beans (so good!)), one scrambled egg, and two slices of tempeh bacon. Topped with salsa. Yum! And was accompanied by broccoli + honey mustard, of course.

Your mom sure is wonderful- that ice cream looks fab...as does everything else in this post! Lately I have been eating a lot of salads, frozen yogurt, fish & berries--> summer eats all the way :)

I really loved it! I guess it seemed a little more like flat-bread than pizza, but the roasted red pepper sauce on it was AMAZING! I've already picked up another one. :)

Ohh my goodness, can I come eat with you!? YUM! That quinoa plate of deliciousness and SWEET treats have me drooling. I have been eating SO MUCH PB lately..like..three sandwiches worth in a day.

Oh my gosh... your food is simply banging >.< I use to love the Kashi pizza's! I usually at the whole thing lol :) Now you got me craving some waffles and maybe ice cream on top...oooo yum!

I actually cheated a little pit... I used Pacific foods vegetarian pho base for the broth. For the rest, there was cooked rice noodles, sliced tofu, green onions, bean sprouts, and fresh basil. I guess there was also supposed to be a tamarind sauce, but I didn't have any so skipped that part. My mom used siracha in her beef version and like that, so that's an option! Overall, I really enjoyed the pho - light and refreshing and actually a nice summer food despite practically being a soup! :)

That oatmeal/yogurt/granola concoction has me counting down until breakfast tomorrow, it looks amazing! The Greek salad looks like my kind of salad- the dominant pieces of feta cheese for the win!

Oh yeah, the feta cheese is what MAKES the salad! That was my favorite part about Greece - a slab of feta just as big, if not bigger, than the salad itself! Now that's they way to do it. ;-)

Okay - you weren't kidding when you said our eats were a lot alike. Seriously, girl! I want to eat all of your breakfasts. I absolutely love topping frozen waffles with Chobani. I actually had it this morning :) oh, and I know they're not the best for you, but Kashi and Whole Foods brand frozen pizzas are.the.best. Nothing like a little homemade ice cream to end the day on a sweet note, huh?

Homemade ice cream? Care to share the recipe? I'm always so curious as to how others make their ice cream. It's like the one food that I think is most often store bought vs. homemade. Would you agree? People seem to make bread, cookies, cake, etc. homemade all of the time but not ice cream.

Fit for Motherhood's Greek yogurt waffles always look so good!

And butterscotch oatmeal? You come up with the best flavors.

I'll have to ask my mom how she made the ice cream. It might have been from a recipe book, so I don't know if I can share the recipe, but I'll definitely look into it! :)
And yes, I think you're right! Ice cream is very rare to see homemade compared to all the baked goods. But I'm actually not too sure why since homemade ice cream is actually probably on of the easiest to make haha!
