Good morning!

Another WIAW already?  That's definitely a good thing, but the way the time is flying by these weeks will never cease to amaze me.  I guess that's just even more reason to enjoy every moment of it.  So let's take advantage of today and share some delicious eats!
Breakfast

Apple + green tea as always followed by peanut butter protein baked oatmeal.  Doesn't that sound quite yummy?  It was, it really was.  And lucky you get the recipe.  Don't expect this to be the last baked oatmeal from me either.  Baked oatmeal Sunday is quickly becoming a tradition at my house.  Do yourself a favor and join in on the deliciousness, okay?
Peanut Butter Protein Baked Oatmeal (almost 25g protein!)

Serves 1

½ cup oats

2 tbsp peanut flour

¼ tsp cinnamon

¼ tsp baking powder

1 egg

5 drops vanilla stevia or other sweetener to taste (if using another sweetener, maybe add a splash of vanilla)

1 tbsp peanut butter

¼ cup  almond milk


Preheat the oven to 350 degrees
Stir together the oats, peanut flour, cinnamon, and baking powder.
Stir in the remaining ingredients.
Pour into a greased ramekin, and bake in the preheated oven for about 30 minutes.
Guess what I did about an hour after breakfast?  I. went. for. a. run.  And yes, being dramatic is totally necessary seeing as it has been well over a month (probably closer to two) since the last time I ran.  But I decided to buckle up (tie up?) my shoes, grab my dog (I prefer to not run alone), and hit the pavement.  We only went a little over two miles, and I was pretty much dead by the time we got back (I think I'm a little out of shape.... just a little ;-) ).  But, I was pretty happy with my time.  Sure, our last bit wasn't so great, but according to the miCoach app on my iphone...
Fastest mile of 8:08?  I'll take it!  My goal during the school year was to have an average under nine minutes, and I reached that goal today with an average of 8:45 min/mile (not shown above).  I may have been pretty tired, but I was also quite ecstatic (even if it didn't show haha).

I needed something to refresh myself before heading out to ride my horse so after a few minutes of lying on my floor, put out by excitement (read: too tired from running to stand.  How do some of you run ten miles?!), I munched on some kale chips and fresh berries.  Just what I needed!  It was a gorgeous day, and after a nice ride, I came in ready for...


Lunch

It was a similar theme as lunch from last week, but tasted completely different (and oh so tasty) with just a few modifications.

And some un-pictured chocolate milk on the side.

I spent most of the rest of the afternoon spraying weeds, but I did take a break to make Brittany's Energy Bites....
...and eat said energy bites.
These were truly fantastic!  I used wheat germ because I was too lazy to grind flaxseed, and boy were they tasty.  I think I'm going to have to keep these on hand at all times.  And since they're so easy to make, I think I'll be able to make them at school this fall too!  Thanks so much for getting me addicted, Brittany. ;-)

After several hours of spraying, it was time for a trip to the grocery store, aka the best store to shop at ever.  I picked up some of these after hearing Sam talk about how good they were.
And of course, I had to break them open as soon as I get back to make sure they were good and all.   The verdict?  WHY have these been missing from my life for so long?!


Dinner

Another panini.  With a mass of broccoli + a boatload of honey mustard.  My mom thinks I need to see the doctor about my broccoli obsession.  I go through almost a head and a half of it a day... even my brother asked how I could eat so much of it and not get tired of it.  It's a fair question, but unfortunately even I am baffled as to how I can eat so much broccoli.
And the night ended with Stonyfield caramel frozen yogurt and a walk with my pups.
Is there a vegetable (or other food) that you are obsessed with and find yourself eating masses of?
Do you run?  If so, do you use some kind of tracking app or a garmin to track your time?
Ever tried Pretzel M&Ms?  If that's a no, make it a yes asap. ;-)

OMG those pretzel m & m s sound so good! My favorite variety is the coconut m & ms but I think pretzel would take its place easily :)! I'm currently sitting here eating a bucket load of carrots and PB. Carrots are definitely a veggie which I could eat a hefty amount of without batting an eyelid!

oh yum how delicious does all of your food looks, especially that baked oatmeal! its been ages since I've had any!
i've only had pretzel m&ms once but they're so good! my faves are the peanut ones though.

Those energy bites look GREAT!! Wheat germ works just as well!! YUMMMM! GREAT job on that run, isn't it so exciting to see a faster pace than expected!? I use a Garmin to track my pace/miles and I loovee it. HA! Also this oatmeal, and that broccoli...I am swooning.

So I think you may have possibly beat your blueberry oatmeal from last week which I didn't think was possible... Seriously, this looks like one big personal peanut butter bread. YUM.

Oh, and I've never tried the pretzel m&m's before because sadly they came out AFTER I discovered my dairy/wheat allergies... But I can just imagine they are awesome. I bet a baked oatmeal which those would be very very good... But also very very dangerous ;)

Oh, and I approve! Ice cream in a cone is the only way to go!

Awesome run! I currently can only run two miles before wanting to throw myself to the ground and I can't make a sub 9:00 pace. Hopefully in the next month I can!

You totally can! I used to not even be able to run a mile without a break, and I think it took me like 10 or 11 minutes to do so. Soon you'll be rocking a 8:xx/mile pace!

I definitely didn't used to be a runner, but then I started running in college with a friend and really enjoyed it! So maybe you can be a runner someday too ;-) (if you even want to be).

OMG that baked oatmeal. One of my favorite things in the world! Nice going on the run! I did one today for the first time in a loooong time, and I'm glad to know someone else is proud of themselves for 2ish miles! I'm loving that broccoli obsession too! Wow, 25 grams of protein in that? That's awesome! I've never had baked oatmeal, but I have about a million recipes pinned to try out.
That's an awesome run, especially for a person who has just gotten back into it! Way to go. :-)
I can't believe you have never tried pretzel M&Ms! They're only the best thing ever. I can't let myself buy a bag because I just devour it in one sitting. ;-)
I don't mind broccoli, but it definitely isn't my favorite. I'd love to have your obsession with it!

I was kind of shocked when I found at there was 25g of protein in it too! I guess it all adds up. :) Definitely give baked oatmeal a try. I've become obsessed with it!
