Well hello there. And happy Wednesday! Half way through the week already? Being busy sure does make the time fly by! But of course, Wednesday is synonymous with WIAW
, something I just couldn't miss out on no matter how busy I am. While I chose the theme of the day to be to show you what my typical weekday looks like these days, the eats are actually from Sunday. You know, to keep you guys on your toes. ;)
Once again, I'm going to jump right into things, so buckle up!
5:30 Alarm goes off, and I stumble (er, I mean leap, yeah that's it) out of bed and waddle downstairs to make my daily cup of decaf green tea.
6:00 Breakfast, aka the only thing that motivates me to get up in the morning. Usually, weekday breakfasts involve fruit, greek yogurt, and granola/cereal or toast with peanut butter or coconut butter, or sometimes all three depending on how hungry I am. I don't really have time to make something hot, unless it's instant oatmeal. Because of this, I take full advantage of weekends to make something like waffles or these banana bread pancakes:
Honestly, these were so quick and easy that I probably could have made them during the week (I mean, how hard is it to mash a banana and stir in some buckwheat pancake mix, cinnamon, vanilla, and almond milk?). Oh well, once my bananas blacken up a bit, I can give this delicious breakfast a weekday try.
6:30 Time to take care of my horse, doggies, and kitty!
7:00 Make myself look decent for the day.
7:15 Fly out the door to class!
8:00-11:00/12:00 Class. It's supposed to go until noon, but he almost always lets us out early (thank. you.).
11:30/12:30 Arrive home and make/devour lunch. I am always SO hungry by the time I get home! What I have for lunch totally depends on the day. Sometimes it's leftovers, sometimes it's a sandwich, sometimes it's a mish-mash of things I find in the fridge and pantry. This past Sunday, it was hot, and nothing sounded better than a good 'ole sandwich!
Okay, so the above sandwich wasn't the actual one I had on Sunday, but it looked just about the same (with broccoli + honey mustard instead of brussel sprouts). I mean why take another picture when you have a perfectly good one? (Read: Excuses, excuses. In reality, I was too famished to remember to take a picture.) The sandwich itself was pretty fantastic. I spread one piece of bread with hummus, the other with roasted red pepper chipotle spread (aka awesomeness), and in went smoked gouda, tomato, lettuce, and marinated artichoke hearts. Some of my absolute favorite foods. Yum. Lunch also included a few grapes and some chocolate milk. (Oh and I also had kale chips earlier. Of course.)
Sometimes, I have to rush to work as soon as I finish with lunch, and sometimes I have a bit of time in the afternoon. If I have time, I'll work on homework (if I have any), run errands, and/or hang out with my family. And every once in a while I have the afternoon off, such as yesterday, and it was fantastic. But that day deserves its own post.
Sunday after lunch, my Mom and I ran errands. I already mentioned that it was a pretty hot day, so my Mom suggested Starbucks - and I had literally been thinking/was about to say the exact same thing. So clearly, a Starbucks date was necessary. I usually get and love their shaken green teas, but I decided to shake (haha?) things up a bit and try something different.
Very berry hibiscus refresher, half sweetened. This. was. amazing. Thankfully, there are many days left of summer which means many days left of these. I also had one of these ginger chews, a new find at Whole Foods.
Man, those things are chewy. If I had still had braces when I had one, well, I would no longer have braces. But they are also very gingery which is always a good thing in my book.
Okay, back to the theme of the post.
Sometime between 6:30 and 7:30 I arrive home from work and have dinner. Dinner is pretty much like lunch as far as anything goes. I hardly ever plan dinners (something I want to work on...) and just want something quick that can get into my tummy fast.
Here is Sunday's dinner:
Steamed corn on the cob, dolmathas (love those things) from whole foods, and a simple salad consisting of greens, steamed peas, goat cheese, and this:
Um, would it be completely inappropriate to drink this? Because I kind of want to just pour it into a tall glass and stick a straw in it. I feel like that might yield some strange looks from others though. Just maybe.
And of course, no night is complete without a frozen dessert. Period.
I don't often buy fruity flavored ice creams (unless it's raspberry), but when I saw this, I decided to give it a go.
And I'm so glad I did!! Super creamy, delicious, and very refreshing. And when I saw these cones, I just couldn't resist.
I never really liked waffle cones, but I've always loved cake cones, and these taste exactly like the ones in ice cream shops.
8:00 Take my pups for a walk.
8:30 My head hits the pillow (yes, I know it's early - trust me, I need my sleep!).
