Hello beautiful people!  I hope you are all having a fabulous week.

My week has been wonderful but incredibly busy at the same time.  Only two more days which means pack, pack, pack.  We're only supposed to take four or five pairs of clothing (we're doing laundry while we're there), but clearly, I've already failed at that....

Oh well.  Everything fit with plenty of room to spare, so I should be good.  But ahhhhh!!!  Only two more days!!!! (Yes, I'm excited ;)  I'm going to try to post a few times while I'm there - I'm not bringing my computer, but my dad is and said I could use his computer (thanks, Dad!).  Although, I won't be able to do any commenting, so sorry about that. :(

I don't have many foodie pictures for you all, but here's a few.

Peanut butter spelt bagel (recipe when I get back!) spread with sweet potato butter, raw carrots, cucumber, and bell pepper, cottage cheese with tomatoes, paprika, and garlic powder.

Green monster made with a frozen banana, Greek yogurt, raw oatmeal, cinnamon, almond milk, frozen raspberries, flaxseeds, and about 2/3 bag fresh spinach. Twas yummy and refreshing!
In preparing for the trip, I had my favorite store-boughten Greek yogurt.

Then this morning, I went running out on the track!  I did a quarter mile jog, streches, and warm up excercises first.  Then I did three 100 meters full speed and one 200 meter full speed.  My legs began to cramp and burn since I did a hard leg workout yesterday, and so I ended with two more 100m only going half speed.  My appetite was ravenous when I got back as I hadn't eaten before I left (eating before running makes my stomach turn upside down!), and so, off I went to the kitchen!  I ended up with one of my favorite breakfasts - oatmeal!  But it wasn't just any oatmeal, it was oatmeal that had three of my favorite foods - oats, peanut butter, and chocolate! (I also had a big glass of water and fresh berries!)

Well, that's it for now!  I best go work on packing.  Next time you here from me, I will likely be in Greece!!

Glad you are getting things about ready to make your trip. Aunt Marice said that Travis and Hannah LOVED the real Greek yogurt when they were there. I hope you enjoy, enjoy, enjoy your trip. I will be watching to see if you get to communicate with us or if you will be too busy.

I LOVE the new blog design!!!

though, this post just reminded me of the disheartening fact that I think I'm dairy-intolerant..:( Before though, larabar crumbled in greek yogurt used to be my favorite post-workout snack!!!

OMG peanut butter spelt bagel?! And you're leaving us to wait to have the recipe! You're killing me here haha!!
I have greek yogurt every single day because it's amazing! Tastes great and loads of protein wooh :) I always have Fage YUM. But lucky you will be able to try REAL greek yogurt..sooo jealous!
Hope the packing goes okay, I HATE packing haha!

You're going to have such a good time!

I tried Fage greek yogurt for the first time recently, and my gosh that stuff is thick! It was like eating sour cream by the spoonful, which was a bit weird. I kind of liked it anyway. :)

I am sooo excited for your trip. I wanted to do a marathon in iceland throught the volcanoes, it was called fire and ice. :)
I loved denmark, it was so compact and environmental (but chilly) I hope you have an awesome time and take lots of pictures

I am absolutely obsessed with Fage 0%. We bought a big tub at Costco yesterday which has 4 cups in it (and each serving you get in one of the normal single-serve is probably around 3/4 cup) and it's halfway gone and that was entirely my fault... OOPS. Definitely one of my fave post-workout meals :)

Lately after running I haven't been hungry AT ALL but then the next day I'm craving carbs like a crazy-person... Not sure what's up with that! I usually want something refreshing after my workouts though so greek yogurt & lots of water or some fruit or something usually fits the bill nicely :)

ah i am an absolutely horrible packer - i always end up over packing when in reality i end up wearing tee shirt and running shorts the entire time im on vaca!!! fav post workout snack - im definately going to have to go with banana and peanut butter! i look for any excuse to eat peanut butter! have fun on your trip : )

Hey girl! I'm so glad that I found your blog! I love all your eats, especially the cottage cheese + tomatoes + garlic + paprika. Savoury cottage cheese is the BEST!! I love making a similar mixture and spreading it on whole wheat bread.. too good!

My favourite post-WO meal is probably a smoothie. Fruits + protein powder!

I LOVE greek yogurt. My favourite is probably Fage nonfat plain! Topped with mango and it's a dream.

my fave greek yogurts are fage and stonyfield oikos, and chobani I only like the flavored ones. The plain one seems too watered down flavor-wise.

Hahaha I always overpack for trips too! I hope you're having an AMAZING time right now, I can't wait to hear all about it when you get back:) but omg is that pb spelt bagel homemade!?! It looks and sounds Phenomenal! I want your recipe asap girl, for realz:) (love gottage cheese + tomatoes together, its one of my fave combos!) Fage 2% is by far my fave greek yog too! and ok, having it with a bowl of veggies and nut thins! ahhh Yum, girl you and me are twinsies for real! (except that i always have to eat before running or I get reall grouchy and run poorly!) oh yeah, and those oats. are. perfect! love me some chocoately oats:) this is such an obnoxiously long comment, but I love love love getting long comments so hopefully you will too! Take lots of pictures in Greece and eat some Falafel for me!!
