Hello everyone!!  It's the weekend at laaaaast!!  This week went by slowly and quickly all at the same time.  I hope it went amazingly well for each and everyone one of you!!

I wanted to thank you all for your warm birthday wishes on my last few posts.  You guys are the SWEETEST!!!  I did have a wonderful birthday - my friends and I went bowling!  We aren't very good, but it was really fun anyway!  Although this guy bowling a few lanes down got nine strokes in a row.  It made us feel like really bad bowlers! ;)

Since I promised the sprinkle recipe a week ago, I'll start with it first (best for last isn't always true ;)

Birthday Surprise Oatmeal
Serves 1

Ingredients:
I serving of oats (I used steel cut oats)
1/2 to 1 cup water
1/2 cup almond milk
1 teaspoon (or more) coconut oil or butter
1/2 teaspoon vanilla extract
Sweetener to taste (I used about three drops stevia)
A handful (or two ;) of sprinkles

Directions:
Combine the oats, water, and milk in a small pot and bring to a boil.  Reduce heat to low and simmer for about 10 or 15 minutes.  Stir in the remaining ingredients.  Pour into a bowl and top with a few additional sprinkles.


Although it's perfect for a birthday, you definitely don't need to wait for a birthday to make it! :D

I didn't make a lot of different food this week, but I still have some yummy food pictures!

Here's a delicious stir fry consisting of spinach, sweet potato, bell pepper, peanuts, ginger, and cinnamon served over a bed of brown/wild rice:

Mmmm... I LOVE stir frys!!  Something else I love?  Meals like the following:

Steamed veggies over a bed of brown/wild rice, fresh raspberries, and a sweet potato with coconut oil and carob chips.  To me, that's the ultimate comfort meal!

Have any of you ever tried soba noodles?  If not, change that!!  They're incredible!  Especially when they make an appearance in these Japanese Soba Noodles from Vegan Fire and Spice!

Next up are the Katie meals of the week!  (Yes, they deserve their own section ;)  First, I finally made her Hot Cocoa Fudge Babies!

Why, oh why, did I wait so long???  Fudge? No.  Better than fudge?  Yes.  Very much yes!!  Please don't make my mistake and don't wait to make these.  Make. Them. Now.

And while you're in the kitchen, why not make some Healthy Chocolate Chip Cookies?

You won't be sorry, and my dad can attest to that.  "THOSE. ARE. GOOD." were the exact words he said when I came home from school to find many missing cookies.  He them went on to say how very lucky I was that there were any left.  If that's no proof of how amazing they are, I don't know what is ;)

1) I used to be allergic to peanut butter (and all other nuts).  It wasn't until about a year ago that I got tested and found out that I'm no longer allergic.  How did I ever live without peanut butter?!

2) I'm a science nerd.  I love all things to do with science and plan to major in either chemistry of physics in college.

3) I volunteer at a vet because I love animals and wanted to be a vet since I was a little girl.

4) I HATE yellow mustard!  I love honey mustard, but I just can't stand yellow mustard.

I love love love purple sweet potatoes! Have you ever tried the ones that are white on the outside but purple on the inside? SO good! Your birthday surprise oatmeal looks super cute by the way. Sprinkles make everything more fun :D

Sweet potato with carob chips and coconut oil sounds amazing. You should have thrown sprinkles on their too!
I make my own lunch for school everyday too. One time my friend turned to me and said "No offense, but your lunches smell really bad." I didn't know how to answer. It was hummus! Like, really? It's not tuna!! haha. Oh btw I am a junior, you asked on my blog.

I have Vegan Fire and Spice too, but never got around to that soba noodle dish. Looks really good!

I am SO bad at bowling it is hilarious haha. That sweet potato with those gorgeous raspberries looks like comfort food at it's finest for sure! Congrats on the award, I love all of those blogs you picked and I LOVED reading your facts. Thanks for sharing :-)

The lighting in your pic makes your sweet tater look like a regular one! But carob chips + sweet potato sounds SO bomb! I never think to do that! AND YES!!!! I LOVE LOVE LOVE SOBA!! and those fudge babies look so bomb! I love all her "babies" recipes! :) and the chocolate chip cookies you made...umm yeah, UNREAL! they look so better and even better then they're less healthy counterparts!


AND I absolutely can't believe you were allergic to nuts and peanuts! THE HORROR! Thank goodness you aren't anymore:) (and I'm buying some sprinkles and making your oats recipe super pronto btw, it looks too dang yummy!) *hope your tests and exams are all going well!

we're opposites!! I love all mustards except honey! so funny. and I haven't had nut butters (except for soy nut and sunflower seed) for a couple of years now because we suspected an intolerance but I'm being tested in a couple weeks so I'm hoping that I can eat'em!!
