I know that pancake day is really tomorrow, but I wanted pancakes today!  I'm not in trouble, am I? ;)  So, what kind of pancakes did I make?  I made Nicole's Carrot Cake Pancakes! Of course, I made a few adjustments because I didn't have all the ingredients.  I subbed unsweetened applesauce for the pumpkin and brown rice flour for the whole wheat flour.  Once my pancakes were all cooked up, I topped them with some of my favorite toppings: peanut butter, coconut butter, and a slab of real butter!

They were absolutely fabulous!  And the addition of blueberries is genius (I LOVE blueberries in my pancakes!) I'm sure I will be making these again at some point in the [near] future! :)


When lunch rolled around, I wanted something sweet (ok, I always want something sweet!)  I was planning on making a "caramel apple" panini, but as I was beginning to make my lunch, I realized that I had no apples! (First no raisins and now no apples!  What is the world coming to?)  At least I had some applesauce.  It oozed out when I paninied it, but it still tasted amazing!!!!  I might try this with thinly sliced, grilled apples next time, but for now this version will do (do very well in fact!)


Cinnamon Caramel Panini

Ingredients:
2 slices bread (I used Rudi's seven grain)
Non-stick agent of choice (I used coconut oil)
Peanut butter
2 dates, sliced
2-4 tablespoons unsweetened applesauce
Cinnamon

Directions:
Spray/spread one side of each piece of bread with your non-stick agent.  Spread the other sides with peanut butter and then top the peanut butter with the dates, applesauce and cinnamon.

Place other piece of bread on top and panini in a heated panini press for 3-5 minutes.  Alternatively, you could try grilling it on a grill pan.

Terrible picture, but it was delicious!  I can't wait to make another one! 


Lastly here's some different foods that I bought today that I can't wait to try!

Brown rice tortilla, gnu foods chocolate fiber bar, plain Greek yogurt (different brand than usual), southwest Sunshine burgers, goat milk butter (!), sun-dried tomato and basil hummus, and Baker's unsweetened chocolate.

I completely agree that paninis are much better than plain ole' sandwiches. Everything just seems to melt together in a panini and gives a nice crisp texture! :)

I actually have baked 2 days ago. I've been visiting my parents (I'm a college girl) and I was at the store with my mom and she was like, "Are you going to bake something tonight?" and I was like "I can." I did do some baking last night when we had a poker party here. Peanut butter cookies with Reese's mixed in!
And I made chili, pizza poppers and buffalo chicken dip!
Looking forward to the commercials during the Superbowl!

Those pancakes are looking nice and having good texture to them which make my mouth to water. The recipes what you post on your blog are very rich in proteins and vitamins and very much good diet recipes to the workout people.
