Helloooooooo!!!  Sorry for my disappearance. School makes it to difficult to post during the week :(
But anyway..... even though I haven't been able to post, I've still been able to cook (somehow, I ALWAYS find a way to cook ;)  
Right, here are my recent eats:
My pesto oats along with broccoli, grapes, and avocado:

I could seriously eat pesto everyday for the rest of my life (oh wait, I already do eat pesto everyday ;)


Olivia's "Greek Bowl:"

This was AMAZING!!!!  I added some black pepper, olive oil, and a good dose of red wine vinegar.  My mom and I nearly polished it all off in one sitting.  Definitely something I will be making again!!!  Great recipe, Olivia! :)


I also made Rachel's Chocolate Orange Oatbran:

And now, for the moment you've all been waiting for (insert drumroll here).... the pancake recipe!!!  When I was at Whole Foods last weekend, I decided to try this in the hopes that I could make some quick pancakes during the week:

Quick Cinnamon Date Pancakes

Ingredients:
1/3 cup pancake mix
2 tablespoons wheat germ
Heaping 1/2 teaspoon ground cinnamon
2 dates, chopped
1/3 cup unsweetened applesauce
6 tablespoons almond milk

Directions:
Combine all ingredients together in the order listed and then cook away (I know you know how to cook pancakes ;)

I was incredibly pleased with how these tuned out!!!!  Go ahead and make them - you won't be disappointed!  (After all they're pancakes ;)

Chocolate orange oats sound AMAZING. I really need to get some orange juice so I can try them out. All your other meals look absolutely delicious too, especially that pancake recipe. :)

Glad you like the oats! I think it's now one of my favorites.

For weekday recipes, I make roasted veggies and tofu or chickpeas a lot when I don't have time for cooking. It's especially quick if you use frozen veggies. No prep work!

Mmmmm...... Roasted veggies are great! And you're right - roast veggies are perfect during the week. Just toss them in the oven and come back in like 30 minutes an there's dinner! I've never thought of using frozen veggies - great idea! :)

I always make paninis with parmesan, tomatoes, and lettuce. I also make burritos with green bell pepper, lettuce, tomato, carrot and cheddar cheese.
