In order....
Last night, I decided I was going to make Katie's Voluminous Oats!  So I combined the oats and water and into the fridge they went!  The next morning, I felt like a little kid on Christmas morning as I walked downstairs with a hop it my step and opened the fridge to find....... oats that looked exactly the same as they had the night before!  I knew that it had to be something I did (it definitely couldn't be Katie!), but it turned out that it was something I didn't do. I forget to cook them a bit before putting them in the fridge. Oops!!  But, there was no way that I was going to let the oats go to waste, so I tossed them in the microwave for a few minutes and then returned them to the fridge for about another half hour. They still tripled in size!!  It was so magical!  I can't wait to make them again, but next time, I will read the directions a little more carefully ;)  I topped my oats with a poached egg using Alex's method.  I poached it for about six minutes and ended up with a perfectly done yolk! It was really fun to make and tasted delicious!  (And, it turned out really cute too!)

And, I completed my goal for the weekend.  I made Kathleen's Chocolate Date Muffins!!!!!!  The only difference is that I made my muffins miniature!  I love any and all things mini!

I popped one in my mouth as soon as they were done, and I immediately fell in love!  Kathleen, your muffins are fantastic!  I loved the chocolate-date combo and they weren't to sweet either!
So for lunch, I filled a brown rice tortilla with some peanut butter and two more muffins:

So heavenly!  I have a feeling that those muffins won't last very long ;)

I really recommend Kathleen's muffins!

I actually baked 2 days ago. I was visiting my parents (I'm a college girl) and I was at the store with my mom and she asked "Are you going to bake something?" Ooh, I got a little behind on my comments this weekend but I loved your last posts!! That peanut butter panini looks AMAZE btw! :) I love your idea of sticking muffins IN a wrap-I'll have to try that one! Oh, and aren't katie's voluminous oats amazing!!
