Happy Sunday!
Is it just me, or do pancakes seem to be the topic of most of my posts lately?  You agree?  Ok, just checking.  But there's really nothing wrong with pancakes being the stars lately.  I mean, after all, they're just that delicious!  
So yesterday, I made Angie's Pancakes!

I've been wanting to make them for quite some time, and I'm so glad that I finally got the chance!  I don't normally like the pairing of cinnamon and chocolate, but in these pancakes, the combination of cinnamon, chocolate, and almond was AMAZING!!!  I topped my cakes with both peanut butter and almond butter.  But I really think that you could top them with anything and they would still be fantastic!  That can't be said about everything.  You were right, Angie!  I LOVED them!!! (as can be seen ;)


I also got to bake again this weekend!  This time, I went for Nicole's PB Oat Cookies that I've been dying to try!  I didn't have a banana (or at least not one that was ripe enough to peel), so I used Nicole's suggestion and subbed about 6 tablespoons of applesauce for the mashed banana.  For the flour, I used half whole wheat pastry and half brown rice, I axed the canola oil (my PB was pretty thin), and I didn't add the salt.

These came out perfect for me!  Just plain perfect!!  Moist, peanut buttery, chocolaty, and, oh yeah, DELICIOUS!  I could not tell at all that they were healthy - only that they were amazingly tasty!


I also made some guacamole yesterday.  We were very low on guac making ingredients (what's wrong with me!), but we made do with what we had and the result was my favorite ever guac!


Super Simple Guacamole

Ingredients:
3 ripe avocados
1/4 cup finely chopped onion
1/3 to 1/2 cup of your favorite green chile (to taste)

Directions:
Mash the avocado and stir in the remaining ingredients. Voila!

I also made some guac oats (cooked rolled oats stirred into some guacamole) - yum!

The guacamole went over AMAZINGLY WELL!!!!  Even my brother (the picky one in the family) loved it!  Success for sure!

But the most exciting news from yesterday is this:

I'm starting another avocado tree!!  It's my fourth one, and each time, I get roots to grow and a tree about a foot tall, and then, it dies :(  But I'm trying again anyway!!!!  Wish me luck in avocado growing adventures! :)

That's so cool! I have no idea how to grow an avocado tree; you should make a post on that!! It sounds seriously SO MUCH fun!!! :) And those cookies look so good, I'm going to go make some today!

Alexandra, your uncle Marlin did the best job of raising an avacado seed into a tree in the house. I don't know what ever happened to it. Maybe he took it with him when he got married.

Your recipe for guacamole sounds so great- and simple! I had no idea you could grow an avocado tree like that. I should definitely give it a try. :)

It's just to keep the seed from sinking. That way the seed gets some air and has room for the roots to grow.

I've never tried growing an avocado tree, but that's a great idea! It would be amazing to be able to walk outside and pick a fresh avocado off a tree.

I make super simple guac by mixing 1 avocado with 1/2C salsa. I just mash it all up and there ya go! My hubby loves it. Quick and easy!

What a coincidence! I just had some pesto pizza! It was Amy's Organic Pesto Pizza. It looks a lot like yours except it has a couple of tomato slices on top. I love pesto pizza!
