Good morning, all!


So, what did you think of when you read the title?  Maybe Tinker Bell sprinkling fairy dust over some mushrooms?  Or did you imagine a mushroom being pulled from a hat? Perhaps you pictured a wand turning a mushroom into a button? 
But, to tell you the truth, mushrooms don't need any extra magic.  Mushrooms are magical without any help.  And this recipe proves it!


Magic Mushroom Sauce (serves 4 as a side dish or topping)

Ingredients:
7 dried mushrooms
1 cup water
2 to 3 tablespoons organic, unsalted butter (this can easily be made vegan by subbing vegan butter or olive oil)
1/4 cup chopped onion
3 cloves garlic, minced
9 oz button mushrooms (or other mushroom of choice), chopped
1/2 cup sherry or white wine, optional
3 tablespoon chopped parsley
Sea salt and black pepper, to taste

Directions:
First, combine the dried mushrooms and water together in a small saucepan and simmer for about 12 minutes, or until the mushrooms are tender.

Remove the mushrooms from the water, give them a good chopping, and reserve the cooking water.  Melt the butter in a medium, nonstick skillet.  Add the onion and cook until the onion is tender.  Add the garlic and cook until fragrant.  Stir in both the fresh and dried dried mushrooms and continue to cook away until the mushrooms become soft.  Time to add the sherry and simmer the mixture for about a minute.  Next, add the reserved mushroom water, give a few good stirs, add parsley, and stir again.  Remove the mixture from heat and add desired amount of salt and pepper.

I served my magically powered mushrooms over a serving of TVP and alongside some brown rice and lima beans:

I'd give mushrooms a ten! They're one of my favorites. Your mushroom sauce looks really delicious. I bet it would be great over pasta.

Mmm...those little fungi's can make any meal! I'm on a shitake kick...and I made a pizza out of portobello last wk!
