I just had a pretty amazing breakfast!  Yet, it was super simple.  Isn't it great when that happens?
I was contemplating between an egg and oatmeal.  Final decision: use both.
Then, I was contemplating between sweet and savory.  Final decision: sweet.
Next, I was contemplating what to use for the sweet.  Final decision: applesauce.
Finally, I was contemplating what would go with cinnamon.  Final decision: that's easy, cinnamon!
And thus, Cinnamon Apple Egg Oats (I know, I know - not very creative) were born.......


Cinnamon Apple Egg Oats

Ingredients:
1 serving of steel cut (or rolled oats) 
Liquid for cooking the oats (I used about 1/3 cup water and 1/3 cup almond milk)
1 egg (use organic, vegetarian fed if possible)
Cinnamon 
About 1/3 cup organic, unsweetened applesauce

Directions:
Bring the oats and cooking liquid to a boil in a small pan.  Reduce heat to simmer and cook until the oats are creamy.  Meanwhile, melt some butter in a non-stick pan and cook the egg until it is done to your likeness.  When the oats are done, stir in cinnamon to taste.  Scrape the oats into a bowl and top with the egg, the applesauce, and a sprinkling of cinnamon.

I was amazed at how good this dish tasted!

Do try it - I know you want to.  (If you're vegan, you could probably replace the egg with some kind of tofu scrammble).


The daily question: Are you a breakfast eater?
I couldn't live with skipping any meal, but if for some reason I did have to skip one, it definitely would not be breakfast!
