But, first step first: What should I eat? Well, a few nights ago, I had finally found the answer to that first question: a burger. Not just any burger, but a mango tofu burger from my Mom's A Dash of Aloha cookbook. Now, on to the second question. I knew that I wanted it on bread (Rudi's seven grain with flax to be exact), and I knew that I was too lazy to cut up any tomato, onion, etc. So, I was down to the spread. Ketchup is an obvious choice, but everyone uses ketchup. Mayonnaise (or miso mayo) crossed my mind as I usually like it with veggie burgers, but I didn't really feel like mayo at that point in time. Instead, I settled with something I've never put on a burger before - one of my true loves, pesto!!!!!!
